January’s Feature - Mushrooms

Even in the depths of winter, Wisconsin’s agricultural community is thriving.

This month at St. Charles Station, we’re highlighting the work of local indoor mushroom farmers who cultivate an incredible variety of mushrooms year-round. Grown in carefully controlled environments, these mushrooms offer exceptional flavor, texture, and consistency, allowing us to showcase them at their peak when outdoor fields are frozen.

From earthy shiitakes to delicate oysters and hearty criminis, our January feature celebrates the skill, innovation, and dedication of Wisconsin growers who bring fresh, local ingredients to the table no matter the season.

As always our specials at St. Charles Station are gluten-free as is, with options available for vegetarian substitutions as well.
